Cinnamon Apple Coffee Cake
This base of this cake starts out with a few simple ingredients and comes together in minutes. A few of the ingredients that help keep this cake so moist is the sour cream, oil and milk. This Cinnamon Apple Coffee cake is sweetened with brown sugar and sugar giving it the perfect balance. This coffee cake is also made with Chino Valley Ranchers Large Brown Eggs which helps aid in the richness and deliciousness of the coffee Cake.
One of my favorite things about Chino Valley Ranchers is that the company follows strict sustainable practices such as composting and recycling their packing material. All of this in an effort to reduce their carbon footprint.

Filling
Fresh, tart granny smith apples are diced and tossed in a cinnamon sugar mix. This filling gives this cake the absolute perfect balance of sweet and spice from the cinnamon.
Streusel Topping
Cinnamon, Flour and Brown Sugar are tossed together with melted butter to create an incredible slightly crisp streusel.

How to store the coffee cake
If you happen to not eat the entire coffee cake, you can place the leftovers in a airtight container. The coffee cake should be placed in the fridge because it does contain fresh apples, leaving it out might lead to a moldy cake. The coffee cake will remain fresh for 1-3 days after baking.
You can also freeze the coffee the cake. Simply cut individual slices of the coffee cake, wrap each tightly in plastic wrap and freeze. It should keep in the freezer for up to a month.
When ready to eat, let the coffee cake come to room temperature then place in the microwave to warm up just slightly.

Cinnamon Apple Coffee Cake
Ingredients
Cinnamon Coffee Cake
- ½ cup Vegetable Oil
- 1/2 cup Unsalted Butter
- 1 teaspoon Salt
- 1 cup Brown Sugar
- ½ cup Sugar
- 2 teaspoons Baking Powder
- 1 tablespoon Vanilla Extract
- 3 Eggs
- 1 cup Sour Cream
- 1 cup Milk
- 3 ¾ cup All Purpose Flour
Filling
- 1 cup Brown Sugar
- 2 tablespoon Cinnamon
- 1 tablespoon Sugar
- 1 ½ Diced Granny Smith Apples
Toppings
- ½ cup Brown Sugar
- ½ cup Sugar
- 1 cup All Purpose Flour
- 1 tablespoon cinnamon
- 6 tablespoon Butter
Instructions
Filling
- 1. In a bowl, mix together brown sugar, cinnamon, sugar and diced apples. Set
aside.
Topping
- 1. In a separate bowl mix together sugar, brown sugar, all purpose flour, cinnamon
and softened butter until crumbly.
Cinnamon Apple Coffee Cake
- 1. Preheat oven to 350 degrees.
2. In a bowl fitted with a paddle attachment, mix together the butter, oil, sugar and
brown sugar until light and fluffy.
3. Add eggs one at a time. Then Vanilla.
4. Measure out wet ingredients in one bowl and dry ingredients in another.
5. Pour in half in dry ingredients, then half of wet ingredients. Repeat until all dry
and wet ingredients have been fully incorporated.
6. Grease 2- 8 inch pans or 1 -9×13 inch pan.
Assembly
- 1. Divide half of the batter into the greased pans.
2. Divide filling between both pans if using the 8 inch pans. Pour in the remaning
batter. With a knife, swirl the apple filling around to try and evenly disperse the
apple filling.
3. Top batter with streusel topping.
4. Bake for 55-60 minutes or until a toothpick comes out clean.
