How to Make Cheesecake
- Prepare your crust by mixing together the graham cracker crust, sugar, and butter. Press into a 9in Springform pan.
- In a stand mixer, combine the softened cream cheese, sugar, and vanilla. Add in the eggs and sour cream. Place a rotisserie pan in the bottom rack of the oven with 2 cups of water to create a steamy oven for the cheesecake. Pour into the prepared curst , swirl with strawberry puree. Place the cheesecake on the rack directly above the rotisserie pan of water and bake for 65-75 minutes or until the edges are fully set and the middle is just slightly jiggly.
- After 75 minutes, turn the oven off and allow the cheesecake to sit in the oven for 1.5 hours without opening the oven door.
- After, place the cheesecake on the countertop to cool for about 30 minutes before placing in the fridge.
- Allow the cheesecake to cool in the fridge for at least 4 hours.
Strawberry Sauce
For this cheesecake recipe, a quick and easy strawberry sauce is used. For the sauce, I typically use strawberries that are starting to go bad. Start out by dicing the strawberries up, then add them to a heavy bottomed pot. Add in lemon juice, sugar and stir. Continue stirring until thickened, this will take about 5-10 minutes.
How do you make swirls on cheesecake?
Once your cheesecake is poured into the springform pan, spoon the sauce throughout the top of the cheesecake. Take a toothpick or knife and run it through the batter so the swirls can be in various directions.
