So obviously my sweet tooth is kinda out of control so I’m always looking for something that can satisfy my sweet tooth without me feeling guilty afterwards. Well Friends, I think I may have found the solution….STRAWBERRY.OATMEAL.BARS.
So quick and simple yet so freakin good. The best part is that I got my picky 3 year old to try them so yeah a definite win!
I greased a 9×13 pan and preheated the oven to 350 degrees. Mix all of your dry ingredients in a medium size bowl, then add the room temperature unsalted butter. You could use a pastry blender for this or you could use your hand…either works fine. Press half the mixture into the pan.
I made my own strawberry preserves for this recipe however if you don’t feel like doing that… you could simply use a jar of store bought preserves….either is totally fine.
If your going to make the preserves, heat the strawberries, sugar and lemon juice in a sauce pan and cook for about 5 minutes just enough to break the strawberries down. Spread the strawberry mixture on top of the oatmeal mixture and top with remaining oat mixture.
Bake for 35 minutes or until golden brown. Allow to completely cool before cutting.
These little bars have helped me get through my obnoxious sweet tooth craving. I was so tempted to drizzle these with some glaze but I resisted the urge even though that would’ve been amazing. Ugh just an idea…. let me know if you try drizzling yours with a little powdered sugar glaze! Enjoy!

Strawberry Oatmeal Bars
Ingredients
- 2 sticks unsalted Butter
- 1 1/2 cups All Purpose Flour
- 1 cup Brown Sugar
- 1 1/2 cups Old Fashioned Oats
- 1 teaspoon Baking Powder
- 1/2 teaspoon Ground Cinnamon
Strawberry Filling
- 1 1/4 cup Strawberries diced
- 1/4 cup Sugar
- 1 teaspoon Lemon Juice
Instructions
- 1. Preheat oven to 350 degrees. 2. In a medium saucepan, mix the strawberries, sugar and lemon juice together. Cook for about 5 minutes or until a sauce starts to form. Remove the pan from the heat and set aside. 3. In a medium bowl, mix the flour, brown sugar, cinnamon, oats, baking powder and butter together until all combined and the butter is fully incorporated with the dry ingredients. Press half the mixture into a 9×13 pan. Top with the strawberry preserves then top with remaining oat mixture. Bake for 35 minutes or until golden brown. 4. Let cool completely before cutting.
