Strawberry Oatmeal Bars

Delicious healthy oatmeal bars filled with homemade strawberry preserves.

Ingredients

  • 2 sticks unsalted Butter
  • 1 1/2 cups All Purpose Flour
  • 1 cup Brown Sugar
  • 1 1/2 cups Old Fashioned Oats
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Ground Cinnamon

Strawberry Filling

  • 1 1/4 cup Strawberries diced
  • 1/4 cup Sugar
  • 1 teaspoon Lemon Juice

Instructions

  • 1. Preheat oven to 350 degrees. 
    2. In a medium saucepan, mix the strawberries, sugar and lemon juice together. Cook for about 5 minutes or until a sauce starts to form. Remove the pan from the heat and set aside. 
    3. In a medium bowl, mix the flour, brown sugar, cinnamon, oats, baking powder and butter together until all combined and the butter is fully incorporated with the dry ingredients. Press half the mixture into a 9x13 pan. Top with the strawberry preserves then top with remaining oat mixture. Bake for 35 minutes or until golden brown. 
    4. Let cool completely before cutting.
