This quick and easy Zucchini bread is a staple in our house! It’s so delicious, makes the perfect breakfast, snack or dessert.

What makes this bread so good?
The grated zucchini makes for an incredibly moist bread. The cinnamon used in this recipe really takes this bread up a level. The best part is that it has a chai spice glazed on top ! This recipe is so easy, takes a few minutes to make and makes 2 loaves of bread. Delicious!

How do you make this quick and easy Zucchini Bread ?
- Wash the zucchini and dry off. Do not peel.
- Use the large grate of a box grater to grate the zucchini.
- Add brown sugar, sugar and zucchini together in a bowl.
- Next, add in the oil, vanilla and eggs then whisk all wet ingredients together.
- Then fold in all purpose, salt, cinnamon, baking soda and baking powder
- Divide the batter between two- 9 inch baking loaves.
- Bake at 350 degrees for 45-50 minutes or until toothpick comes out clean

How to freeze Zucchini Bread
After the loaves cool completely, wrap the loaves individually in plastic wrap. Wrap both loaves tightly ensuring that no air can seep through. Place in the freezer for up to 2 months.

Zucchini Bread
- 3 cups All Purpose Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1/2 teaspoon Baking Powder
- 1 tablespoon Cinnamon
- 3 Eggs
- 1 cup Vegetable Oil
- 1 3/4 cup White Sugar
- 1/2 cup Light Brown Sugar
- 1 tablespoon Vanilla Extract
- 2 cups Zucchini grated
Chai Spice Glaze
- 1 cup Powdered Sugar
- 1/2 teaspoon Chai Spice
- 1 teaspoon Milk
Chai Spice
- 1/2 tablespoon Sugar
- 1 1 /2 teaspoon Cinnamon
- 1 teaspoon Ground Ginger
- 1 teaspoon Ground Cardamom
- 1/2 teaspoon Allspice
- 1/2 teaspoon Nutmeg
Instructions
Zucchini Bread
- 1. Preheat the oven to 350 degrees. 2. Grease 2- 9 inch bread pans. 3. Grate the zucchini and set aside. Be sure not to drain the liquid. 4. Mix the sugar, oil, eggs, and vanilla together. Add in the zucchini and mix together. 5. Fold in flour, baking powder, baking soda, cinnamon and salt into the wet ingredients. 6. Divide and pour into the greased loaf pans. Bake for 45-50 minutes or until a toothpick comes out clean.
Chai Spice Glaze
- Place powdered sugar, chai spice and milk together in a bowl. Mix until well combined. Once the Zucchini Loaf has cooled, pour the chai spice over top.
