Sweet and Tangy Lemon Bars with a slightly crunchy cookie crust

Shortbread Crust
1cupButtersoftened
1/2cup Sugar
2cupsAll Purpose Flour
1teaspoonVanilla Extract
Lemon Filling
4Eggs
1 1/2 cupsWhite Sugar
1/4cupAll Purpose Flour
2Lemons Juiced
Instructions
1. Preheat oven to 350 degrees.2. Blend softened butter, flour and sugar together. Press into a 9x13 inch pan. Bake for 15 minutes. 3. While the crust is baking, blend the eggs, sugar flour and lemon juice together. Pour into prepared crust. Bake for an additional 20 minutes. 4. Let cool completely before cutting, at least 2 hours.
