Ingredients

  • 1 cup Unsalted Butter
  • 1 cup Brown Sugar
  • 2/3 cup Granulated Sugar
  • 2 teaspoon Vanilla Extract
  • 3 tablespoon Honey
  • 1 Egg Yolk
  • 1 Whole Egg
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 2 cups All Purpose Flour
  • 3 cup Semi-Sweet Chocolate Chips I used half Semi-sweet and half Milk Chocolate Chips
  • 3/4 cup Instant Oats
  • 1/2 cup Old Fashioned Oats

Instructions

  • 1. Preheat the oven to 350 degrees Fahrenheit.
    2. In the bowl of a stand mixer, cream the butter, sugar, brown sugar, vanilla extract and honey together for 2-3 minutes. Add in the egg and egg yolk, mix together until fully combined.
    3. Add in the flour, baking soda, and baking powder. Mix until just combined then stop the mixer in order to add the old fashioned and instant oats. Lastly, add in the chocolate chips.
    4. Using a medium scoop, scoop cookie dough on a parchment lined paper then refrigerate for at least 30 minutes.
    5. When ready to bake, place cookies 2 inches apart on a parchment lined baking sheet. Bake for 12-14 minutes.
