Spray a 10 cup Bundt Cake pan with non-stick baking spray. Preheat the oven to 350 degrees Fahrenheit.
In a medium size bowl or bowl of a stand mixer, combine the pudding mix, flour, baking powder and salt together until well combined. Set aside.
Next, take 1 ripe banana and mash it in a separate medium size bowl. To that, whisk in eggs and sugar then stir until well combined. Add in softened butter, sour cream and vanilla then mix until completely combined.
Pour wet ingredients into the dry ingredients. Using a hand mixer or stand mixer, mix the ingredients until just combined being sure not to overmix.
Pour the batter into the prepared bundt pan then bake for 45-50 minutes or until a toothpick inserted in the middle comes out clean.
Once cooled, make the frosting by mixing cream cheese, banana cream mix, powdered sugar, heavy cream and salt. Spread evenly over the cake and enjoy.
