Ingredients

  • 1 cup Unsalted Butter Softened
  • 2 1/2 cup All Purpose Flour
  • 1 3.4oz French Vanilla Pudding Mix
  • 1 1/2 teaspoon Baking Powder
  • Pinch of Salt
  • 3 Eggs
  • 1 1/3 cup Sugar
  • 1/2 cup Ripe Mashed Banana 1 medium size banana
  • 1 cup Sour Cream Room Temperature
  • 1/2 teaspoon Vanilla Extract

Banana Cream Frosting

  • 4 oz Cream Cheese Softened
  • 2 Tablespoons Powdered Sugar
  • 1/4 cup Heavy Cream
  • 2 Tablespoon Banana Cream Pudding Mix
  • Pinch of salt

Instructions

  • Spray a 10 cup Bundt Cake pan with non-stick baking spray. Preheat the oven to 350 degrees Fahrenheit.
  • In a medium size bowl or bowl of a stand mixer, combine the pudding mix, flour, baking powder and salt together until well combined. Set aside.
  • Next, take 1 ripe banana and mash it in a separate medium size bowl. To that, whisk in eggs and sugar then stir until well combined. Add in softened butter, sour cream and vanilla then mix until completely combined.
  • Pour wet ingredients into the dry ingredients. Using a hand mixer or stand mixer, mix the ingredients until just combined being sure not to overmix.

  • Pour the batter into the prepared bundt pan then bake for 45-50 minutes or until a toothpick inserted in the middle comes out clean.
  • Once cooled, make the frosting by mixing cream cheese, banana cream mix, powdered sugar, heavy cream and salt. Spread evenly over the cake and enjoy.
